Today I decided to try plant based coffee I saw someone post on Facebook about plant based coffee so I decided to try it since it’s healthier than traditional coffee with milk, I tried the cold coffee latte with almond and coconut milk. It’s not super sweet and low I’m carbs and sugar.

Easy Chicken Salsa Verde Enchilada
I made this into a Keto friendly low carb meal without the tortillas
Recipe with my adaptation
Easy chicken salsa verde (enchilada)
1 tsp avocado or EVOO
2 garlic cloves minced
1 cup green salsa
1 cup red salsa
1/2 c sour cream
Thyme/cilantro leaves to your taste preference
1-2 lbs chicken breasts
1 cup cheese of your liking
Heat oil in large skillet over medium heat. Cut and rinse chicken breasts. Mince garlic and cook over medium heat until fragrant. Add chicken and cook until it’s fully white. Pour in each salsa one by one then stir before adding the second. Stir again until nicely mixed in. Lower heat to simmer and add sour cream and herb of your choice. I just added thyme until it looked nice and tasted good. Add pepper. Turn heat to medium once more and add cheese of your choice mixing slowly for 5 minutes or so. Place in oven at 350° and grease baking dish. Bake for about 10 minutes and you’re done!
You’ll see with a lot of my recipes I don’t always use tortilla so I can keep my carb count low especially if I’ve been eating more calories and carbs than normal.
Miyoko’s Vegan Cream Cheese Original
Usually when I buy cream cheese I get the Kite Hill brand but I thought I’d switch it up to see what Miyoko’s tasted like since I’ve heard some good reviews on it. I bought it and tried it. While my daughter likes it I didn’t. It tasted not bad,texture was good but the tangy flavor which is probably from the coconut cream I think I didn’t like. It seems that Daiya’s cream cheese is similar so I’m not even going to try it because I imagine taste is similar to Miyoko’s. If I see other brands without coconut cream aside kite hill I might give it a try. But for now as far as Vegan Cream Cheese goes kite hill is my favorite! Do you need cardio to lose fat?

Interestingly I’ve been doing just that- not just aerobic but HIIT and strength training and following diet/lifestyle change by counting calories and I’ve seen inches come off in just about 3 months. Sometimes I eat more than allowed but I also work those calories off. My goal is to keep my net calories under 1000. Interestingly it helps me keep weight off as long as I continue my regimen it comes off fairly easily.

I’ve always wondered if low fat or fat free was genuinely healthy. Before I started eating mostly vegan/plant based food I would always make sure the milk was full fat.
Health benefits of eating strawberry leaves and stem
Recently I’ve learned that eating the strawberry leaves and stems provide good nutritional value including eating the strawberry itself.
I just tried it in the Summer Strawberry Smoothie and it really brought out a better taste!
Vegan Blueberry Breakfast Cake
Adapted from Blueberry Breakfast Cake
This is a complete modified version of her recipe for vegans
2 c almond flour
1 scoop stevia
2 t baking powder
1/2 c applesauce
1/2 c plant based milk
1/4 c vegan butter
1 t lemon zest
2 cups blueberries
Topping:
1 scoop stevia
1/4 c almond flour
1/4 c chopped walnuts
1/2 t cinnamon
3 T vegan butter
1) preheat oven to 350° F and grease an 8X10 pan
2) in a large bowl whisk the flour,stevia and baking powder. Add applesauce,butter and lemon zest. Mix until dry ingredients are moist.
3) Add blueberries and spread into pan.
4) Add stevia,flour,walnuts and cinnamon in a bowl. Add butter and mix with hands until crumbly. Sprinkle over batter. Bake at 350° for about 30 minutes.
Oats Overnight
Oats Overnight is a vegan friendly company that offers basically breakfast in a package! I found Oats Overnight on Instagram through one of the celebrities I follow.
The company offers whey based or plant based. Obviously I chose plant based. It has a lot of very healthy ingredients in it including chia seeds,hemp seeds, gluten-free oats and maple sugar. I got the Starter kit which is plant based . For me as I’m petite and short in stature I broke it into 3 servings. It comes with 3 flavors and a personalized blender bottle made for oats overnight. What I did was pour 8 oz plant based milk into the bottle and add 1/3 package to the blender bottle then shook it up. Next just stick in the refrigerator for 5 hours or overnight then drink! I promise you will love it! The taste is super delicious and tasty plus it keeps me full for over 5 hours no joke! I don’t even need a snack before lunch.
Update: The oats Overnight oats really can keep a person full literally through the whole day! I’m not kidding! It’s like 6pm where I am and though I ate 3 meals total with no snacks in between I truly don’t need the other two because my body is still sending full signals which normally doesn’t do.
Black Bean And Sweet Potatoes Flauta (Vegan modified)
Here’s my version of the black bean and sweet potatoes flauta
1 can of Black Bean(Drain and rinse)
1 cup mexi corn
1 small/medium sweet potato
1/4 c onion of your preference diced
1/4 tsp chili powder depending on your preference (If you’re feeding kids you may want to skip it)
1/2 tsp garlic powder
1/2 tsp cilantro dried or fresh
1/2 tsp cumin
1/4 tsp cayenne pepper (Again if feeding kids you may want to skip it)
Daiya Cream Cheese or Kite Hill Cream Cheese
4-6 oz of shredded or grated cheese( I only use daiya when I know I need to melt it. Otherwise personally I don’t care for it)
2 heaping spoonful of salsa green and red mild or spicy depending on your hot tolerance(You can choose salsa,taco sauce or enchilada sauce)
1) Pre heat the oven to 450°.
2) Prepare the sweet potatoes with skin on and bake until sweet potato is soft enough to poke a hole with a toothpick.
3) Mash the inside of the sweet potato with a fork and place in a large bowl with the corn,diced onion,black beans,cumin,cilantro and salsa then mix well.
4) Serve!
Personally I love it prepared this way as it’s so flavorful also it’s low in carbs when you don’t add the tortillas.
Nutrex Hawaii Vanilla Protein Shake
I have never tried Spirulina until this past week. I’ve heard about it and all the great health benefits it comes with including blood pressure control,digestive,lower gi,cholesterol control. I’ve seen it locally but it was kinda pricey. A few weeks ago my family and I were at Sam’s Club looking at shampoo when I just so happened to come upon Nutrex Hawaii ‘s Protein Shake which also boasts Rhodiola and Ginseng in it as well. I bought it for about 25.00 for 14 servings but I only use like an eighth cup of a scoop. I mix it with water and an eighth cup of protein powder (Nutrex Hawaii Vanilla Protein Shake) and it’s light in calories(100 with a light vanilla taste. It doesn’t stain the teeth at least this one doesn’t.
One thing I found is that it can keep you full for awhile but not longer than 3 hours in my case. It also helps with bowel movement. If you drink it in the morning it’ll help you produce it either in the morning or sometime in the early afternoon. Even children can have it. Unfortunately for v she can’t handle the amount of spirulina in it but can handle smaller amounts of spirulina.
I’ll also be trying other spirulina and similar algae products to drink or add into smoothies.When mixed it darkens to a beautiful dark green.
