Black Bean And Sweet Potatoes Flauta (Vegan modified)

Here’s my version of the black bean and sweet potatoes flauta

1 can of Black Bean(Drain and rinse)

1 cup mexi corn

1 small/medium sweet potato

1/4 c onion of your preference diced

1/4 tsp chili powder depending on your preference (If you’re feeding kids you may want to skip it)

1/2 tsp garlic powder

1/2 tsp cilantro dried or fresh

1/2 tsp cumin

1/4 tsp cayenne pepper (Again if feeding kids you may want to skip it)

Daiya Cream Cheese or Kite Hill Cream Cheese

4-6 oz of shredded or grated cheese( I only use daiya when I know I need to melt it. Otherwise personally I don’t care for it)

2 heaping spoonful of salsa green and red mild or spicy depending on your hot tolerance(You can choose salsa, taco sauce or enchilada sauce)

1) Pre heat the oven to 450°.

2) Prepare the sweet potatoes with skin on and bake until sweet potato is soft enough to poke a hole with a toothpick.

3) Mash the inside of the sweet potato with a fork and place in a large bowl with the corn, diced onion, black beans, cumin, cilantro and salsa then mix well.

4) Serve!

Personally I love it prepared this way as it’s so flavorful also it’s low in carbs when you don’t add the tortillas.

Child approved review of Sneakz Organic Strawberry Protein

Last month I posted my review on Sneakz but today was the first time V has tried it. Was making my Orgain protein cookies n cream for dinner when she said mama mama want my own protein and brings me one of the smaller blender bottles that I got for smoothies and her. I asked her which do you want? We have Sneakz strawberry or Orgain cookies n cream. She looks and said this one mommy so strawberry was the winner!

We added just about maybe 2 oz of open nature almond milk vanilla unflavored and around 1/2 scoop of Sneakz strawberry protein to it. If you’d like to see her reaction you can see it on Instagram,.Vicki’s review on Sneakz strawberry protein
