Vegan Blueberry Breakfast Cake

Adapted from Blueberry Breakfast Cake

This is a complete modified version of her recipe for vegans

2 c almond flour

1 scoop stevia

2 t baking powder

1/2 c applesauce

1/2 c plant based milk

1/4 c vegan butter

1 t lemon zest

2 cups blueberries

Topping:

1 scoop stevia

1/4 c almond flour

1/4 c chopped walnuts

1/2 t cinnamon

3 T vegan butter

1) preheat oven to 350° F and grease an 8X10 pan

2) in a large bowl whisk the flour,stevia and baking powder. Add applesauce,butter and lemon zest. Mix until dry ingredients are moist.

3) Add blueberries and spread into pan.

4) Add stevia,flour,walnuts and cinnamon in a bowl. Add butter and mix with hands until crumbly. Sprinkle over batter. Bake at 350° for about 30 minutes.

Nutrex Hawaii Vanilla Protein Shake

I have never tried Spirulina until this past week. I’ve heard about it and all the great health benefits it comes with including blood pressure control,digestive,lower gi,cholesterol control. I’ve seen it locally but it was kinda pricey. A few weeks ago my family and I were at Sam’s Club looking at shampoo when I just so happened to come upon Nutrex Hawaii ‘s Protein Shake which also boasts Rhodiola and Ginseng in it as well. I bought it for about 25.00 for 14 servings but I only use like an eighth cup of a scoop. I mix it with water and an eighth cup of protein powder (Nutrex Hawaii Vanilla Protein Shake) and it’s light in calories(100 with a light vanilla taste. It doesn’t stain the teeth at least this one doesn’t.

One thing I found is that it can keep you full for awhile but not longer than 3 hours in my case. It also helps with bowel movement. If you drink it in the morning it’ll help you produce it either in the morning or sometime in the early afternoon. Even children can have it. Unfortunately for v she can’t handle the amount of spirulina in it but can handle smaller amounts of spirulina.

I’ll also be trying other spirulina and similar algae products to drink or add into smoothies.When mixed it darkens to a beautiful dark green.

Orgain is a whey/vegan friendly company made by a physician. So far I have tried a few of their products with plans on trying others minus the whey based products and I’ll tell you why later in the post.

I’ve tried the Vanilla protein powder which is one of my favorites so far by the company. It does have stevia but no aftertaste or digestive issues. I look for products that don’t have maltodextrin , whey in it mostly. Some of my favorite sweeteners are xylitol,stevia,cane sugar,brown rice syrup (providing its organic) and monk fruit. Other protein powders I’ve tried are peanut butter which admittedly I don’t like even though I love peanut butter. The flavor to me wasn’t peanutty. Next up for protein powder is Cookie n cream which my daughter picked out for me/us to try.

My daughter also loves the kids chocolate brownie protein bar which so far is the only one she’s tried but I’ll be ordering a new batch and different flavor soon.! I’ve tried the chocolate chip cookie dough protein bar which is absolutely delicious. Coating of the bar is thick just like cookies n cream and every bite is savory! You must try it if you don’t believe me!

Why I don’t buy whey protein powder is that whey is harder to digest vs plant based protein such as pea protein. I also avoid soy which has phytoestrogens and could cause hormone imbalance in my daughter and I ‘s genetic epilepsy. However my girl is a stickler for tofu and miso soup.
